Back on Track

     So it's been a while since I've posted. Mostly because of how busy life has been however, I'm back now and have several thing worthy of catching you up on!

     Let's just start with today... I have gone headfirst into my Vegan lifestyle again and have really enjoyed this last go around. Also, since camp has been over, I have also gone head first into exercise. I have started running. Ok. Running is pretty loose interpretation of what I am doing so we will say jogging. That's right! Jogging. A mile. Every single day. When I first started, I couldn't jog the whole thing without stopping and now I am able to. I am also doing an hour long kickboxing video. I have to say, I am actually enjoying it. I know, I know, that doesn't sound like me AT ALL. I am not one to enjoy exercise however, I really am this time. I have also lost 2 lbs, which I am very proud of.

     Ok, let's talk about today! Today I made meatless meatloaf! Yep, I did. I have no idea if it's any good because it's still cooking but we will see how this one goes. I have been crazing a meatloaf lately and I got this new cook book that had a recipe in it I thought I could do. So, I tried it. I will let you know how it turns out. Let's just say that if it turns out to be a flop then we are ordering Pizza for dinner! Also, I made Vegan chocolate chip cookies. Now these are delicious. I have had several of them already. Not only do they contain no dairy, they also contain no flour! Crazy stuff huh? They turned out beautifully and I am so proud of these new adventures I have embarked on today.

     Every time I have a day like this, I feel more empowered to live this lifestyle. It is not what anyone else in my family is doing. It's not popular in the South or with people I know. It's expensive and inconvenient, however, I know this is for me. I am not someone who can have things in moderation. I have to live by strict guidelines or I will over do it. I love becoming more and more educated about how to successfully live this way.

     Isn't this where everyone finds themselves at one point or another? How many times in our life do we start a new chapter? Every few months, years maybe? Sure! We are constantly being asked to change. Marriage, age, children, health, jobs, etc... there are lots of things that ask us to change. We can either hate it, be upset because of it, be mad that no one else is being asked to change or we can embrace it, get educated about it and be thankful for the person this change is going to make us become.
